Ingredients
160 ml canned Honest to Goodness BPA free Organic Canned chickpea liquid
1 cup Select Foods Organic Rapadura Sugar or caster or brown sugar
Method
Using an electric mixer, whisk the canned chickpea liquid (aquafaba) until soft peaks form. Be patient! This process can take up to 15mins. Whisking constantly, gradually add sugar until the mixture is thick & firm.
Drop large spoonfuls (approx 2 tablespoons of mixture) onto 2 baking-paper lined trays & bake in a 120ºC oven for 1½-1¾ hours, until firm to touch. Cool meringues in the oven, then serve.
