Ingredients
1 tbsp Honest to Goodness Organic Extra Virgin Olive Oil
1 large brown onion, diced
2 carrots finely chopped
2 stalks finely chopped
3 cloves garlic crushed
1 tsp Pure Food Essentials Organic Cumin Powder
1 tsp sweet paprika
1½ cups Honest to Goodness Organic Soup Mix
2 tbsp organic tomato paste
1750 ml Pacific Foods Organic Vegetable Broth
Fresh parsley to serve
Method
Rinse soup mix and soak in water for at least 3 hours (or overnight).
Heat a large saucepan over medium-high heat. When hot add the oil and onion and sauté the onion until it is brown. Add the garlic, cumin, sweet paprika and tomato paste to the onions and stir for a few minutes before adding the chopped carrot and celery along with the soup mix and vegetable stock.
Bring the soup to the boil, then turn it down to a simmer. Place a lid on the pot and cook for 1 hour. It can be served as is, or you can puree in a food processor for a smoother texture. Top with fresh parsley.
