How to Make Water Kefir

Ingredients

100ml jar water kefir grains  (Find Water Kefir Grains in the fridge at Mojo Health)

3tbsp Organic Mountain Raw Sugar

1tbsp Honest to Goodness Organic dried sultanas

990ml filtered water                                                           

Pinch Bobs Red Mill Bicarb soda                                                

Pinch Honest to Goodness Himalayn Salt                                                           

Method                                                                                  

First Ferment: Mix all ingredients in a 1 Litre click lock glass jar & leave to ferment for 12-48hrs.  It does not need to be refrigerated.  The hotter the weather or conditions where you are fermenting, the quicker the kefir will ferment.  In colder temps expect 48hr ferment; in hotter temps expect 24hr ferment.

After the first ferment the kefir should be slightly fizzy and a bit sour. Strain using a plastic strainer & keep your grains aside for the next batch. Discard sultanas or use in cooking.  Always use approx. 100g of grains - use the leftover kefir grains in smoothies, bliss balls, or feed to your pets or compost.

Second Ferment:  Add flavours to the kefir for your 2nd ferment.  Flavours include grated ginger & turmeric, lemon, mandarins, berries - seasonal fruits are best! Depending on the weather, ferment for 24/48hrs.  Strain & bottle kefir in glass bottle.  Refrigerate & enjoy!

Notes

Sugars – you can use Select Foods Organic Rapadura/Loving Earth Organic Coconut Sugar/Honest to Goodness Blackstrap Molasses to create a darker brew with richer flavour.

Organic Dried Fruits – swap sultanas for Organic Figs, Hiltona Organic Prunes or Honest to Goodness Organic Apricots or use a combination

Water – replace filtered water with Organic Coconut Water

When not using your kefir grains they must be stored in the fridge in a glass jar with 1 tablespoon of sugar in approx. 200ml of water.  Sugar water must be changed every 10 days or the kefir grains will run out of ‘food’ & die.
