Incaberry Tomato Salsa

Vegan, Gluten free, Dairy free

Ingredients

160g roughly chopped red and yellow cherry tomatoes

30g chopped Honest to Goodness Organic Inca Berries

50g diced red onion

20g finely chopped red capsicum

10ml fresh squeezed lime juice

1.5 tsp chopped coriander

1.5 tsp finely chopped red chilli pepper (optional)

1/8 tsp Pure Foods Essential Organic Ground Cumin

1/8 tsp Honest to Goodness Fine Himalayan Salt

1/8 tsp Pure Food Essentials Organic Black Pepper, ground

Drizzle of Honest to Goodness Organic Olive Oil

Method

Mix all ingredients in a bowl.  Top with extra coriander for garnish. 

Option

Like a smoother style salsa?  Try pulsing in a blender for a couple of seconds
