Kelp Noodle Salad with Peanut Dressing

 

Ingredients

1 pack Goldmine Kelp Noodles or The Whole Foodies Green Tea Kelp Noodles

2 cups carrots, shredded

1 cup finely sliced tomato

1-2 spring onions

2-3 tsps Honest to Goodness Organic Black or Organic White Sesame Seeds

Lime wedges, to serve

Dressing

3 Rounded tbs Planet Organic Peanut Butter

2 – 3 tbs Bragg Apple Cider Vinegar

1 tbs Spiral Foods Tamari

1 tbls Honest to Goodness Maple Syrup

1 clove grated garlic

1/2 teaspoon ground ginger or 1 teaspoon fresh grated or minced

Method

Combined the dressing ingredients & set aside to let the flavours develop.

Rinse kelp noodles under cool running water.  Add noodles, carrots, tomatoes & sesame seeds to a large bowl, add dressing & mix until well coated.  As kelp noodles are not as soft & pliable as wheat noodles it will take an extra few minutes to coat.

Top with green onions & extra spinkle of sesame seeds.  Top with squeezed lime juice. 

Serves 2 – 3.
