
· 4 fresh stems of kale, ripped into bite sized pieces
· Approx. 75g Baby spinach
· Approx. 200g Sundried tomatoes, chopped
· 1 small cucumber, coined
· Approx. 100g kalamata olives
· 1-2 tbsp of pine nuts
· Olive oil to taste
Combine all ingredients into a large salad bowl, serves 3-4 people. For extra flavour try adding Peace, Love, Vegetables cashew cheese or grilled chicken breast for the meat eaters.
