Sweet & Salty Roasted Nuts

Serves approx 12-15 as a snack.  Gluten free. Vegetarian.

 

50g Sol Organic Grass Fed Ghee

2 tbsp Honest to Goodness Organic Maple Syrup

2 tsps smoked paprika

1kg Honest to Goodness Organic Organic Raw ABC Nut Mix (Almond, Brazil, Cashew) 

2 tsps Honest to Goodness Himalayan Fine Pink Salt

Preheat the oven to 180º­C.  Place a pan on medium heat.  Add ghee and maple syrup.  Cook until ghee has melted and syrup is mixed in. 

Place the nuts onto two large roasting trays.  Divide the mixture between the two trays.  Sprinkle paprika over the nuts.  Toss the nuts to coat then place in oven.  Shake trays after 15mins to ensure even cooking of the nuts.  The nuts are ready when they have turned golden – approx. 30 mins.

Cool nuts. Sprinkle with salt.  Store in airtight container for 2 weeks. 

Options: Create your own nut mixture with peanuts, pecans, hazelnuts or macadamis.  Swap the maple syrup for brown rice syrup for a fructose free receipe. Toss with Celtic Sea salt instead of himalayan.
