
Gluten free. Dairy Free & Vegan. Serves 4.
Taco Seasoning Ingredients
1 tsp onion powder
½ tsp Pure Food Essentials Organic cayenne powder
½ tsp paprika
1 tsp Planet Organic Chilli Flakes
½ tsp Pure Food Essentials Organic Cumin
½ tsp oregano
½ tsp garlic powder
½ tsp Pure Food Essentials Organic Black Pepper
Combine all ingredients into mortar and pestle and grind until combined
Taco Filling
1 brown onion, diced
2 medium truss tomatoes, diced
1 green capsicum, diced
1 small jalapeno pepper sliced (optional)
1 can Honest to Goodness Red kidney beans
Homemade Taco seasoning – as above
2 bunches of fresh Cos lettuce
Method
On medium heat fry onion, tomato & capsicum (& optional jalapeno pepper) until juices appear then turn heat to low.
Rinse red kidney beans in a colander, and then add to the fry pan. Sprinkle homemade seasoning into the mixture, and simmer on low for 2-5mins.
Whilst simmering wash lettuce leaves and separate leaves onto plates, when mixture is heated through and giving off an aromatic scent, scoop a small amount into individual leaves.
Top with mashed avocado, Tofutti Dairy Free Sour Cream, and Daiya Vegan Cheddar Cheese!
